Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the grated zucchini, oats, flour, brown sugar, honey, coconut oil, and vanilla extract until well combined.
- In a separate bowl, whisk together the baking soda, cinnamon, and salt.
- Combine the dry ingredients with the wet ingredients and stir in the chocolate chips if using.
- Drop spoonfuls of dough onto a lined baking sheet.
- Bake for 12-15 minutes or until golden brown.
- Remove from the oven and let cool on a wire rack.
