- 4 cups shredded zucchini
- 1 pound ground turkey or chicken
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground turkey or chicken over medium heat.
- Add shredded zucchini, marinara sauce, and Italian seasoning; stir to combine.
- Remove from heat and let cool slightly.
- In a bowl, mix eggs, mozzarella cheese, and half of the Parmesan cheese.
- Add the meat mixture to the cheese mixture and stir until well combined.
- Pour the mixture into a greased casserole dish and top with remaining Parmesan cheese.
- Bake for 30-35 minutes or until golden brown and bubbly.
Notes
- Feel free to add your favorite pizza toppings.
- Make sure to drain excess moisture from the zucchini.
