Ingredients

  • 4 cups shredded zucchini
  • 1 pound ground turkey or chicken
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground turkey or chicken over medium heat.
  3. Add shredded zucchini, marinara sauce, and Italian seasoning; stir to combine.
  4. Remove from heat and let cool slightly.
  5. In a bowl, mix eggs, mozzarella cheese, and half of the Parmesan cheese.
  6. Add the meat mixture to the cheese mixture and stir until well combined.
  7. Pour the mixture into a greased casserole dish and top with remaining Parmesan cheese.
  8. Bake for 30-35 minutes or until golden brown and bubbly.

Notes

  • Feel free to add your favorite pizza toppings.
  • Make sure to drain excess moisture from the zucchini.
