- 2 large zucchinis
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix the ricotta, mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper.
- Spread some marinara sauce on the bottom of a baking dish.
- Take a zucchini strip, fill it with the cheese mixture, and roll it up.
- Place the rolled zucchini in the baking dish seam-side down.
- Top with remaining marinara sauce and sprinkle with extra mozzarella.
- Bake for 25-30 minutes until bubbly and golden.
- Let cool for a few minutes before serving.

- For extra flavor, add herbs like basil or oregano to the cheese mixture.
- Top with fresh basil for garnish before serving.
