  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix the ricotta, mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper.
  4. Spread some marinara sauce on the bottom of a baking dish.
  5. Take a zucchini strip, fill it with the cheese mixture, and roll it up.
  6. Place the rolled zucchini in the baking dish seam-side down.
  7. Top with remaining marinara sauce and sprinkle with extra mozzarella.
