- 2 cups grated zucchini
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 3 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the grated zucchini, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the vanilla extract and walnuts if using.
- Pour the batter into a greased 9x13 inch baking pan.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool before serving.
Notes
- Serve with cream cheese frosting for added flavor.
- Can be stored in an airtight container for up to 5 days.
