  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the grated zucchini, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the vanilla extract and walnuts if using.
  5. Pour the batter into a greased 9x13 inch baking pan.
  6. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Let it cool before serving.
