- 2 cups ripe apricots, pitted and chopped
- 1 cup yogurt (preferably Greek)
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- In a blender, combine the apricots, yogurt, sugar, lemon juice, and vanilla extract.
- Blend until smooth.
- Taste the mixture and adjust the sweetness if necessary by adding more sugar.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- Once it reaches a soft-serve consistency, transfer the yogurt to a container and freeze for at least 2 hours.
- Scoop and serve once frozen to desired consistency.
Notes
- For a creamier texture, use full-fat yogurt.
- Optionally, add chunks of apricot for added texture.
