- 2 large eggplants
- 2 cups marinara sauce
- 3 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the eggplants lengthwise and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- In a mixing bowl, combine ricotta cheese, eggs, oregano, garlic powder, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer eggplant slices, followed by the ricotta mixture, marinara sauce, and mozzarella cheese. Repeat until all ingredients are used, finishing with mozzarella on top.
- Bake in the preheated oven for about 45 minutes until bubbling and golden.
- Let it cool for 10 minutes before slicing and serving.
