Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants lengthwise and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a mixing bowl, combine ricotta cheese, eggs, oregano, garlic powder, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer eggplant slices, followed by the ricotta mixture, marinara sauce, and mozzarella cheese. Repeat until all ingredients are used, finishing with mozzarella on top.
  7. Bake in the preheated oven for about 45 minutes until bubbling and golden.
  8. Let it cool for 10 minutes before slicing and serving.
