- 1 whole beef rib
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon salt
- 1 teaspoon black pepper

Instructions
- Preheat the oven to 450°F (230°C).
- In a bowl, mix garlic, rosemary, thyme, salt, pepper, and olive oil to create a paste.
- Rub this herb mixture all over the beef rib.
- Place the beef rib in a roasting pan.
- Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (160°C) and continue cooking until the internal temperature reaches your desired doneness.
- Let the beef rest for at least 15 minutes before slicing and serving.
