Ingredients

Instructions

  1. In a large pot, heat the milk over medium heat until it begins to simmer.
  2. Remove from heat and stir in the vinegar or lemon juice. Let it sit for 10 minutes to curdle.
  3. Line a colander with cheesecloth and pour the curds and whey into it. Rinse under cold water.
  4. Gather the cheesecloth and squeeze out excess liquid. Transfer to a bowl and mix in salt.
  5. Refrigerate for at least an hour before serving.

Notes

  • For a creamier texture, add a splash of cream after rinsing the curds.
  • This cottage cheese can be added to salads, pastas, or eaten on its own.
