- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 can (14 ounces) sweetened condensed milk
- ½ cup key lime juice
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Add sweetened condensed milk, key lime juice, and vanilla extract, mixing well.
- Add eggs, one at a time, mixing just until incorporated.
- Pour filling into the crust and smooth the top.
- Bake for 30-35 minutes or until set.
- Cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
- For a richer flavor, use fresh key limes if available.
- Top with whipped cream and lime zest for garnish.
