Ingredients

  • 9 lasagna noodles lasagna sheets
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cups spinach, fresh
  • 1 cup mushrooms, sliced
  • 1 cup zucchini, diced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 3 cups white sauce (béchamel)
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  4. Add spinach, mushrooms, and zucchini. Cook until tender.
  5. In a mixing bowl, combine ricotta cheese, Italian seasoning, salt, and pepper.
  6. In a baking dish, spread a layer of white sauce, followed by a layer of noodles, then a layer of the ricotta mixture, vegetable mixture, and mozzarella cheese.
  7. Repeat the layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
  8. Bake for 30-35 minutes, or until the top is golden and bubbly.
  9. Let it cool for a few minutes before slicing and serving.

Notes

  • For a healthier version, you can use whole wheat noodles.
