Ingredients

- 500 grams lamb offal
- 1 cup rice
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 lamb intestine, cleaned
Instructions
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- In a pan, heat olive oil and sauté onions until translucent, then add garlic and cook for another minute.
- Add the chopped offal and cook until browned.
- Stir in the rice, oregano, salt, and pepper, and add water as needed. Cook until rice is half done.
- Stuff the mixture into the cleaned lamb intestine and tie the ends with kitchen twine.
- Place in a baking dish with a little water and cover with foil. Bake for about 1 hour.
- Remove the foil and bake for an additional 30 minutes to crisp the outside.
- Let rest before slicing and serving.
Notes
- Serve with lemon wedges for added flavor.
- This dish can be enjoyed hot or cold.
