Ingredients

  • 500 grams lamb offal
  • 1 cup rice
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lamb intestine, cleaned

Instructions

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a pan, heat olive oil and sauté onions until translucent, then add garlic and cook for another minute.
  3. Add the chopped offal and cook until browned.
  4. Stir in the rice, oregano, salt, and pepper, and add water as needed. Cook until rice is half done.
  5. Stuff the mixture into the cleaned lamb intestine and tie the ends with kitchen twine.
  6. Place in a baking dish with a little water and cover with foil. Bake for about 1 hour.
  7. Remove the foil and bake for an additional 30 minutes to crisp the outside.
  8. Let rest before slicing and serving.
