This Swiss roll combines the classic flavors of the Black Forest cake for an indulgent chocolate experience.

Ingredients

  • 4 large eggs
  • 100 grams granulated sugar
  • 100 grams all-purpose flour
  • 30 grams unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 50 grams unsalted butter, melted
  • 200 grams cherry filling
  • 200 ml heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, beat the eggs and sugar until light and fluffy.
  3. Sift together the flour, cocoa powder, baking powder, and salt, then fold into the egg mixture.
  4. Stir in the melted butter until well combined.
  5. Pour the batter into a lined baking tray and spread evenly.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Allow to cool slightly, then turn it out onto a damp towel.
  8. Roll the cake with the towel while warm and let it cool completely.
  9. Once cooled, unroll the cake and spread cherry filling, then re-roll.
  10. Whip the cream with powdered sugar and vanilla until soft peaks form, then spread over the roll.
  11. Decorate with additional cherries and chocolate shavings if desired.
