- 4 large eggs
- 100 grams granulated sugar
- 100 grams all-purpose flour
- 30 grams unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 50 grams unsalted butter, melted
- 200 grams cherry filling
- 200 ml heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, beat the eggs and sugar until light and fluffy.
- Sift together the flour, cocoa powder, baking powder, and salt, then fold into the egg mixture.
- Stir in the melted butter until well combined.
- Pour the batter into a lined baking tray and spread evenly.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Allow to cool slightly, then turn it out onto a damp towel.
- Roll the cake with the towel while warm and let it cool completely.
- Once cooled, unroll the cake and spread cherry filling, then re-roll.
- Whip the cream with powdered sugar and vanilla until soft peaks form, then spread over the roll.
- Decorate with additional cherries and chocolate shavings if desired.

- Serve chilled for best flavor.
- Roll the cake tightly for a better presentation.
