- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup milk
- 1/2 cup unsalted butter
- 4 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 1 cup mascarpone cheese
- 1 tablespoon cocoa powder
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract, then sift in the flour and baking powder, mixing until just combined.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool completely before layering.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold in the mascarpone cheese.
- Once the cakes are cool, soak each layer with the brewed coffee and spread a layer of the mascarpone mixture on top of the first layer, then place the second layer on top.
- Spread the remaining mascarpone mixture over the top and sides of the cake.
- Dust with cocoa powder before serving.
Notes
- For best flavor, let the cake chill in the refrigerator for a few hours before serving.
- You can add chocolate shavings on top for an extra touch.
