  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup milk
  • 1/2 cup unsalted butter
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1 tablespoon cocoa powder
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract, then sift in the flour and baking powder, mixing until just combined.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow the cakes to cool completely before layering.
  7. In a separate bowl, whip the heavy cream until stiff peaks form, then fold in the mascarpone cheese.
  8. Once the cakes are cool, soak each layer with the brewed coffee and spread a layer of the mascarpone mixture on top of the first layer, then place the second layer on top.
  9. Spread the remaining mascarpone mixture over the top and sides of the cake.
  10. Dust with cocoa powder before serving.

Notes

  • For best flavor, let the cake chill in the refrigerator for a few hours before serving.
  • You can add chocolate shavings on top for an extra touch.
